Brunch is by far my favorite dining experience, and not only because of the champagne! I am usually indecisive when it comes to choosing meals so the breakfast or lunch option makes me happy. With that said, I have decided to share my go-to brunch recipe for you to enjoy! This Berry Oatmeal satisfies my consistent craving for sweets while keeping me on track with a healthy diet. It is basically my comfort food breakfast, perfect for a chilly winter morning.
I have gotten so many compliments on this super easy dish, it is sure to be a hit at any gathering you host or attend. Also, don’t hesitate to try it out with different fruits as it is very versatile – below just happens to be my favorite traditional combo!
Berry Oatmeal Bake
¼ cup honey
1 cup old-fashioned rolled oats
½ teaspoon baking powder
¾ teaspoon cinnamon (or more!)
Pinch of salt
1 cup milk (I prefer to use Almond Milk)
1 egg white
1 teaspoon vanilla extract
1 ½ cups of diced Strawberry & Blueberries
¼ cup chopped walnuts (or pecans)
Preheat oven to 375 – Lightly spray 8’ x 8’ baking dish with cooking spray
Combine oats, baking powder, salt, and cinnamon in mixing bowl – pour half into baking dish once combined – Add half of the desired fruit and nut to baking dish over the oats – repeat with remaining oats & fruit
In a small mixing bowl whisk milk, vanilla extract, egg white, and honey until well combined – pour this liquid mixture over the prepared oat baking dish
Bake for 35-40 minutes, or until the oatmeal turns golden brown – remove from the oven and let cool for 15 minutes before serving
